Christmas bauble:  Speculoos

It is one of the absolute Christmas cookie classics: the speculoos, a crispy light brown spice cookie that has been baked flat in traditional shapes for centuries.

This one also has a typical motif on the front: the windmill. With four or six large mill wings above a round-arched entrance, it fills the full height of the rectangular shape. However, the back of the cookie is also unexpectedly rich in detail, with an irregular, matt biscuit-brown shimmer, as if with a few scattered, large, baked almonds.
